Mutton biryani

Assalamualikum 
    This is our home style biryani ,I like to share with u all.my family and friends like my briyani very much 
Every time I cook it came out very tasty . Now you can try and tell how do u like my briyani.

Mutton  biryani 

             



Ingredient

For marinate mutton 

      


Mutton 600grams
Yogurt. 3 tablespoon
Red chili powder 1 1/2 teaspoon 
 Ginger & garlic paste 1 tablespoon
Salt to taste

Method

Clean & wash the mutton and marinate for 30 min
Better marinate overnight
Cook it in pressure cooker till it done
Measure the water in the mutton and keep aside




For rice

Cardamom -10
Cinnamon-10
Clove -10
Ghee-3 table spoon
Oil- 1/4 cup
Basmati rice -500 grams ( 3 cups rice) (soak the rice for 15 min)
Onion -3 cups finely sliced ( 5 medium no )
Tomato  -4 finely chopped 
Green chillies -6 slit 
Ginger&garlic paste- 3 tablespoon
Yogurt -2 tablespoon
Red chili powder - 1/2 teaspoon
Mint leaves a bunch clean and cut
Coriander leaves a bunch clean and cut
Water ( 1 cup basmati rice-11/2 cup water) Calculate along with the mutton water like this.

Method 

1: in a heavy bottom pan add oil and ghee, when it become hot add spices cardamom ,cinnamon ,clove

2:chopped onions. Fry it when it change color add green chillies and mint & coriander 1 table spoon each.

3: fry the onion till it golden brown.side by side add little by little mint and coriander leaves.keep some for last through.

4:Add the chopped tomatoes and fry till it done

5: Add the ginger/garlic paste sauté for while,now the oil will separate from the thick gravy.

6:now add red  chili  powder 

7: then yogurt some mint and coriander leaves  

8: strain the water in cooked mutton add only mutton and stir for another 5 minutes. 

9: now adjust with salt and chili ,mix the boiled mutton with the  gravy well

10 : it time to add water ( calculate the mutton water and add it first then for remaining add normal water. 

11: adjust salt ,when water boils add the soaked rice and remaining mint and coriander leaves and cover it with the foil paper simmer the flame cook for 10 min then turn off the heat let it cool for another 5 min.
Serve hot with raita
Note : 
If you don't have foil paper cove with damp cloth and title the lid.
